Ingredients:
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
1/8 tsp. Dijon mustard
¼ tsp. salt
1/8 tsp. ground black pepper
1 package Del Caribe® Brand Queso Blanco Cheese from V&V SUPREMO®
1 package spring mix
½ cup blueberries, washed
½ cup strawberries, washed and sliced
½ cup blackberries, washed
¼ cup sliced almond, toasted
3 Tbsp. Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
Preparation:
1. Whisk together olive oil, vinegar, mustard, salt & pepper. Set aside.
2. Preheat a nonstick skillet over medium high heat for 2 minutes. Slice Caribe cheese into ¼ inch slices. Place on the skillet and sear for about 1 minute on each side. Let cool for about 1 minute. Cut the slices into bite size pieces. Set aside.
In a salad bowl, toss salad greens, berries, almonds, Caribe and Cotija cheese, drizzle dressing, mix gently, serve and enjoy!
